I like to cook an abundance of food BECAUSE then I don’t have to cook for like the next 3-4 days…though my kids are entering the massive growth phase so that might be more like 2 days (lol)…my son grew like 6 inches this past year!…
For Thanksgiving, I made way more food than needed for the actual Turkey Day.
This year we just celebrated with ourselves…my husband, me and my two kids…so we have plenty.
First let’s start with what you think about those leftovers….
Do you think you have to eat them all before they go bad?
Do you think of ways to get it out of the house because you feel you have no control and will eat it all?
Maybe a better question is HOW do you want to think about the leftovers?
Those are questions you can mull over, and I am going to tell you what I do with my leftovers…
So, the obvious one is we just graze on what’s in the fridge. I let my family decide what they want and they reheat it. Simple. I love this.
But now that it’s been a few days, this is when I start deciding what I am going keep in fridge and what I will freeze.
I start with the desserts and will portion them and freeze them.
Portioning the dessert will eliminate the need to thaw out an entire pie if you only want one piece…therefore you will not be tempted to eat the rest of the thawed pie.
Depending on what you are freezing will determine how you prepare it for the freezer. Meaning, I tend to use wax paper to portion things out.
If the food needs to freeze a bit before it gets packed in …like say pumpkin pie…I’ll wrap it in wax paper and put them on a tray and put them in freezer for about 1-2 hours so they get more solid. After about 2 hours, I will put them in a freezer bag. This is so you don’t get one mushed pie when you bag them.

I will continue to freeze everything I don’t think will be eaten in the next couple of days. Pretty much everything can be frozen.
