What to Eat Wednesday!

Spring has sprung and so starts all the yummy fruits and vegetables of the season.
Asparagus is starting to pop up at local farmers markets here in South Jersey.

Here are some facts about asparagus:

-Is part of the lily family.
-It’s cousins are onions, leeks and garlic.
-Comes from the Greek word meaning “sprout” or “shoot”
-There are main 2 types- white & green( the white is grown underground so it doesn’t turn green)
-There is also a purple version called Viola

What to look for when selecting your asparagus:
-Firm bright green stalksimg_9617.jpg
-Tight tips

Storing and cooking:

-Best to cook the day you get it but it will last in refrigerator for about 3 days
-You can wrap it in a plastic bag or stand upright in inch of water (cover tops with plastic bag).
