Chocolate Chip Protein Cookies

Chocolate Chip Protein Cookies Shape It Up Recipes Chocolate Chip Protein Cookies

Ingredients

2 C Old Fashioned Oats
1/4 tsp Salt
8 scoops of protein powder
1 tsp Baking soda
3T Butter (DF Earth Balance)
9T Unsweetened Applesauce
2 tsp Vanilla extract
1 Egg white
1/4 C Sugar
1/4 cup Chocolate Mini Chips (DF Enjoy Life
Brand)

Directions

Preheat oven to 350F degrees. Line pan with parchment paper.
Grind oats in blender until it looks like flour. Add oats to a large bowl then mix in
protein powder, salt and baking soda. Cream butter and sugar in mixer. Mix well.
Add egg and vanilla and mix. Add dry ingredient to the wet ingredient and mix. Stir
in chocolate chips. Shape into balls and flatten out on parchment paper. They don’t
spread so they can be close together. I made these cookies fairly large and baked
them for about 20-25 minutes (checking on them every 5 minutes after the 10 minute
mark). If you make them smaller, bake for 8-10 minutes or until start to get
golden brown on edges. Cool for 10-15 minutes on cookie rack.
DO NOT EAT THESE RIGHT AWAY! Once cool, individually wrap in wax paper and
place in container. Eat them the next day for a moist yummy cookie!
Makes 8 cookies. One cookie is a serving.
These will last in container on counter for about 7 days.

Cranberry Raisin Cookies are good all year round! I tend to make these around the holidays but they are really good any time of the year. Yes! You can eat cookies and still be fit! Make up a batch of Cranberry Raisin Sugar Cookies today!

Cranberry Raisin Sugar Cookies

Ingredients

  • 10 oz of Craisins and Raisins
  • 1 cup granulated sugar
  • *Addition ¼ of sugar for the coating
  • ½ cup coconut sugar
  • ½ cup Crisco
  • ½ cup unsweetened applesauce
  • 2 eggs
  • 3 cups of flour
  • ½ coconut flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract

Directions

Bake at 350 degrees F

  1. Take Craisins /raisins and place in a saucepan.
  2. Cover with 1 cup of water.
  3. Bring to a boil then simmer until all the liquid evaporates.
  4. Remove from heat and place in a container and put in the freezer for about 5 minutes to allow the fruit to cool.
  5. In one bowl, mix flours and baking soda together.
  6. In mixer, combine sugars, Crisco, applesauce, eggs and vanilla.
  7. Once wet ingredients are mixed, alternate between the fruits and the flour mix.
  8. Mix well.
  9. Spoon cookie dough into a ball and roll it in the extra sugar just enough to coat the cookie lightly. *Dough was very sticky. I sprayed a spoon with cooking spray and they slide off well. Once they are in the sugar coating it was easier to make into a ball.
  10. Add to a parchment lined cookie sheet.
  11. Bake at 350 degrees F for 10-15 minutes. When the edges start to get brown pull them out.
  12. Cool for 3-5 minutes on cookie sheet then transfer to a cookie rack.
    These cookies can be made in advance and frozen.

Makes 24 cookies
Serving size: 1 cookie
