Spinach Salad

This light and delicious spinach salad is perfect during the spring and summer months. Take advantage of your local farmer’s market and get fresh spinach, onions and eggs for this easy to make spinach salad!

Spinach Salad

Ingredients

  • 4 cups Spinach, raw
  • 1 Whole Hardboiled  Egg
  • 1 Hardboiled Egg White
  • Red onions, sliced (however many you like)
  • 2 slices Turkey bacon, Applegate Farms

Dressing:

  • 2 T stone ground mustard
  • 1/4 cup apple cider vinegar
  • Salt & Pepper to taste

Directions

Rinse spinach and dry. Peel and slice hard boiled eggs (Click here to see easy way to peel eggs). Cook turkey bacon according to package. Assemble spinach, eggs, bacon, onions. In small bowl, mix mustard and apple cider vinegar add salt and pepper to taste.

Serving: 1
