Here’s an easy quick recipe (even faster if you have power cooked them in advance!)
3-4 oz of cooked chicken
1 chopped apple
1 small yam/sweet potato sliced in circles (keep the skin on)
1 T melted coconut/olive oil, extra to coat the pan
Cinnamon to taste
Place sliced yams in the melted oil coating both sides and place in oiled hot pan. Fry both sides of yam sprinkling cinnamon on each side. Before the 2nd side of the yam is cooked add the apples. Then add the cooked chicken. Cook until the apples become soft. Serve on a plate and enjoy!
